    Chicken Salad to Die For

    2 lb. chicken breast, cooked, cubed
    3 stems Celery, chopped into 1/2 inch cubes
    1 apple, cored, chopped into 1/2 inch pieces
    1 Tablespoon cilantro, chopped
    3 Tablespoons mayonnaise
    1 Tablespoon lemon juice
    1 teaspoon Dijon mustard
    1 Tablespoon chopped fresh parsley
    1/3 cup pecans, chopped medium
    Romaine lettuce to line dishes

    Cut chicken into 1/2" cubes. Add celery, apple, cilantro, mayonnaise, lemon
    juice, mustard and parsley in a bowl. Add chicken; toss to coat. Add pecans
    toss lightly and serve over romaine lettuce.

    Servings 4
