Chopped chicken salad

1 whole chicken breast (6)
Lettuce, carrots, cucumber, tomatoes, mushrooms, spinach, red cabbage (0)
1 oz of Goat�s cheese shredded (3)
Bake chicken ahead of time and allow chilling in the fridge overnight, and then chopping it into bite size chunks. Slice all the veggies for a salad and toss together. Add the cooked chicken and shredded cheese at the time of eating.
Makes 1 serving 9 points, eat a side of chopped fruit of your choice to finish with a dessert type end.
Baking Salmon - 6oz filet (8) and cutting it up makes a nice change to this salad.
