Columbia Salad

Recipe Introduction
This is an adaptation from the Columbia restaurant in St. Augustine, Fl. The
dressing recipe is mine, but you could sub any very garlicky vinaigrette.
List of Ingredients
1 large head of romaine lettuce -- torn into 1"pieces
1 large tomato -- coarsely chopped
1 small red onion -- slivered
1 1/2 cups ham -- julienned
1 cup swiss cheese -- julienned
1/2 cup pimento stuffed green olives -- coarsely chopped
1/2 can grated parmesan cheese
juice of 1/2 a lemon
1 tablespoon worcestershire sauce
1 recipe garlic pecan dressing
Recipe
In a large salad bowl, combine lettuce, tomato, onion, ham, swiss cheese
and olives and toss well.
Sprinkle with parmesean cheese.
Right before serving, sprinkle with worcestershire and lemon juice. pour on
dressing and toss well.
Garlic Pecan Dressing
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup pecans -- toasted
2 tablespoons brown sugartwin ( I use the kind from Canada)
2 cloves garlic
Combine all in blender or food processor.
Blend until smooth and chill.
