Greek Salad

List of Ingredients
1 sliced green pepper
1 cup cauliflower and/or broccoli
2 cups cherry tomatoes
8 oz. feta, crumbled (or tofu)
2 Tbs. lemon juice
2 tsp. dried oregano
1 cup oil
1/2 tsp. salt
1 cubed cucumber
2 cups chopped celery
1 cup sliced ripe black olives (or Greek olives)
1 (small) dash cayenne pepper
3 cloves garlic, finely minced
Recipe
Mix all vegetables and toss in cheese. Put all spices, oil, garlic,
lemon
juice in a jar and shake well. Pour over vegetables and marinate at
least
one hour.
I'm guessing if you make the dressing at least the night before using
it, it
would be even better, giving it a chance to let all the spices flavor
it.
