Jicama & Zucchini Salad

Recipe Introduction
Jicama is a ugly looking round rough brown root vegetable about the size of a softball. Similar in texture to a radish, but with a slightly sweet flavor. Low in carbs, jicama adds crunch and volume to salads and salsas. Peel the jicama to reveal the white crunchy textured vegetable.
a.. 1 small red onion, finely chopped
b.. 1/4 cup chopped fresh cilantro
c.. 1/4 cup fresh lime or lemon juice
d.. 2 tablespoons extra virgin olive oil
e.. 3/4 teaspoon salt
f.. 1 jalape�o, seeded and minced (may be omitted)
g.. 2 large zucchinis, halved lengthwise and cut into 1/4-inch-thick slices
h.. 1 small yellow bell pepper, finely diced
i.. 1 jicama, peeled and finely diced
In a large bowl, combine red onion, cilantro, lime juice, olive oil, salt and jalapeo. Add zucchini, bell pepper and jicama; toss well. Serve chilled or at room temperature.
