Jody's (Mock)Potato Salad

1 bag frozen cauliflower, (you can also use fresh)
1 celery stalk -cut up
1 hard boiled -egg-cut up
6 slices of bacon -chopped up (or more if you prefer,we do)
2 tablespoons of Kraft mayo (more or less to your preference)
Heres the easiest and fastest way to cook this:
In a sauce pan put the entire bag of cauliflower with some water also
drop in the egg for boiling (multi tasking) bring to boil and cook 10
minutes as you would to cook the egg, take out the egg,shell egg,
drain the water really really good......transfer cauliflower & shelled
egg to a bowl set in frig to cool...(dont over cook the cauliflower
you want a little crunch to it not mushy to mimic potatoes)
Meanwhile Put your bacon on a plate with a napkin covering it for
about 5 to 6 minutes or till it looks crispy, while thats in the
microwave cut up your celery...
take bacon out, be careful its very hot, discard bacon grease, cut up
bacon (I use kitchen sheers)
Get your cauliflower out of fridge, cut up your egg and throw
everything in the bowl and stir......viola...this is my husbands
favorite!!!!!!
THIS ENTIRE BOWL HAS ABOUT 5 CARBS and believe me my husband and I
have eaten the whole bowl in one sitting with some chicken off the
grill..lol...
