Simple Tomato Salad

Recipe Introduction
Use the ripest tomatoes you can find and good results will follow.
List of Ingredients
1 pound fresh, ripe tomatoes (any kind), sliced into wedges, juices reserved
2 tablespoons chopped fresh parsley
1 tablespoon extra virgin olive oil
Juice of one lemon (about 2 Tablespoons) (or substitute white wine vinegar
or rice vinegar)
Salt and freshly gournd black pepper
Recipe
Have a pot of boiling water and a pot of cold water (iced if desired) deep
enough to cover the tomatoes. Using a slotted spoon, dip each tomato into
the boiling water for a count of 20, then plunge it into the cold water.
Peelings will come off easily. Peel and slice tomatoes, reserving the
juices that run out.
Combine tomatoes and reserved tomato juice, parsley, lemo juice, and oil in
a mixing bowl. Gently toss, season with salt and pepper, chill for up to 6
hours, and serve.
Try using other fresh herbs—like red bell peppers, basil, chives or oregano,
in any combination or alone.

a reputation as cancer fighters.
