    Recipe Introduction


    Here's a delicious LC alternative to German potato salad.
    I served this along with LC BBQ Ribs for my guests.

    Suzanne says" I have made this with and without the not/Sugar. The sauce is slightly
    thicker with it. I would not call this ingredient essential."


    List of Ingredients




    3 cups fresh cauliflower, cut into nibblets
    6 slices bacon, cut into 1/2-inch pieces
    1 medium onion, sliced
    2 packets Splenda
    1/2 teaspoon not/Sugar (optional)
    1 teaspoon salt
    1 teaspoon oat flour
    1/8 teaspoon black pepper
    1/2 cup red wine vinegar

    Recipe



    Cook chopped cauliflower (covered) in microwave (about 12 minutes) Drain and set aside.
    Meanwhile, cook bacon pieces until crisp. Remove to paper towels to drain.
    Spoon off excess bacon drippings from skillet. Leave enough to sauté the onion slices.
    Cook onion until tender. Stir in splenda, not/Sugar, oat flour and pepper until mixture is well blended.
    Gradually add red wine vinegar. Cook until boiling.
    Gently add bacon and cauliflower back into hot liquid. Stir gently and heat through.
    Transfer to serving dish.
