Wilted Spinach Salad with Nuts & Fruit

List of Ingredients
1/4 cup Safeway SELECT Extra-Virgin Orange Olive Oil
2 packages Spinach Medley Salad or 1 package (10 oz.) washed baby spinach
leaves and 1/4 cup each pine nuts and golden raisins
1/2 cup thinly sliced green onion
Salt and fresh-ground pepper
1 cup Safeway SELECT Salad Fixin's Lightly Seasoned Croutons
1/4 cup crumbled Safeway SELECT Primo Taglio Imported Danish Blue Cheese
Recipe
1. To a 10- to 12-inch nonstick frying pan over medium heat, add orange
olive oil. When oil is hot, add nuts and fruit (either from salad package or
the substitute amounts). Cook, stirring, until nuts are golden and fruit is
puffed and warm. Add spinach and green onion. Gently fold spinach and cook
just until wilted, about 2 minutes. Sprinkle lightly with salt and pepper.
2. Spoon mixture onto 4 salad plates or one platter. Scatter croutons and
cheese over salad; serve at once.
