List of Ingredients
2 pounds of Fresh Broccoli
1 Tablespoon soy flour (or guar gum or another thickener)
1 1/2 cups of whipping cream, divided
1 cup (4 ounces) shredded sharp Cheddar Cheese
1 cup ( 4 ounces) Shredded Monterey Jack Cheese
2 tablespoons grated Parmesan or Asiago ( Asiago is my preference)
1 1/2 Tablespoons prepared horseradish
1/2 Teaspoon Salt
1/4 to 1/2 (depending on taste preference) ground red pepper
Recipe
-Remove broccoli leaves, cut tough ends of stalks; discard. Wash broccoli,
and cut into spears. Arrange the spears in a steamer basket over boiling
water. Cover and Steam approximately 8 -10 minutes until it has become
crisp-tender.
-Combine flour and 1/2 cup of the whipping cream in a saucepan,
stirring until smooth. Stir in remaining 1 cup of whipping cream. Cook over
medium heat, stirring constantly, until thickened and bubbly.
-Add Cheddar, Monterey,Asiago/or/ Parmesan, horseradish, salt and red
pepper. Stir constantly, until cheeses have melted. Spoon sauce over
broccoli spears. Serve Immediately.
