Old Fashioned Cole Slaw

Lemon Dressing:
1/4 cup extra-virgin olive oil
3 Tablespoons fresh lemon juice
1 teaspoon grated lemon zest
1 teaspoon onion powder
1/2 teaspoon salt
Freshly ground pepper to taste
1 packet Splenda or Stevia
Salad:
1 thinly sliced cabbage (about a pound)
2 or 3 small green onions, thinly sliced on the diagonal
1 small carrot, coarsely shredded
1 Tablespoon chopped fresh flat-leaf parsley
2 Tablespoons cilantro if desired
Whisk the olive oil, lemon juice, lemon zest, onion powder, salt and pepper
together until blended.
Toss the veggies in a salad bowl. Add the dressing and mix until coated.
Chill at least 30 minutes, covered, until serving time.
