Queso Fundido With Zucchini & Mushrooms

List of Ingredients
2 cups shredded Monterey jack cheese -- or mozzarella cheese
1 cup crumbled feta cheese
1 tablespoon butter
1 teaspoon minced garlic
1 medium zucchini -- trimmed and diced
10 mushroom caps -- thinly sliced
freshly ground black pepper
warm low carb tortillas or crepes
Recipe
Preheat the oven to 350°F-180°C. Combine the cheeses and place in 4 1/2-cup ovenproof ramekins or a 9-inch 230 mm square casserole. Place on a baking sheet and bake 5 minutes. Remove from oven. Meanwhile, melt the butter in a small skillet over medium-high heat. Saute the garlic, zucchini, and mushrooms until lightly browned.
Season with black pepper. Scatter the vegetables over the cheese, and return to the oven. Bake about 7 minutes, or until the cheese is completely melted and bubbly. Serve hot with warm low carb tortillas or crepes.
