Rani's O'Brien Not-Potatoes

Rani's Low-carb Cook's Nook Chat on AOL
1 head cauliflower, diced up and lightly steamed
1 medium onion, diced
1-2 green peppers, thinly sliced
1 garlic clove, chopped or garlic powder
1 tablespoon unflavored protein powder
cayenne pepper, salt, and pepper (to taste)
cooking oil
Heat the cooking oil in a large pan and add the cauliflower chunks.
Saute the cauliflower until it starts to lightly brown. Sprinkle with cayenne pepper and protein powder.
Add the onions and peppers and continue sauteing until tender.
Season with cayenne pepper, salt, and pepper to taste. Serve hot.
**Variation: To make as a casserole, cook as directed above, but add
3/4 cup grated or shredded cheese.
Put mixture into a greased casserole dish and top with a mixture of 3/4 cup cream and 1/4 cup water.
Top with crushed pork rind crumbs and dot with butter.
Bake at 350 degrees for 15-20 minutes, or until casserole is heated through and cheese is completely melted.
