    Jalapeno "Poppers" Snack

    1 dozen fresh jalapeno peppers
    4 oz cream cheese
    4 oz. cheddar cheese (I like x-sharp)
    12 slices bacon, cut in half

    Preheat oven to 375.

    Slice peppers lengthwise, remove seeds and white "ribs". (Don't rub your
    eyes while doing this part - wash your hands when you finish this step!)

    Cut both cream and cheddar cheeses in to 1/2 in. cubes; fill pepper halves
    with cheese cubes, then wrap each pepper piece in a half-slice of bacon (be
    sure bacon covers top where you have inserted the cheese!). Line up the
    peppers on a foil-lined cookie sheet.

    Bake in 375 degree oven for 25-30 minutes, or until bacon is cooked. Serve
    warm or cold, just as they are, or with sour cream or sugar free salsa ...
    trust me, you won't miss the old fashioned fried poppers!
