    List of Ingredients




    2 Tablespoons olive oil
    2 medium onions, chopped
    1 red bell pepper, chopped
    1 pound Chorizo sausage
    2 pounds ground beef or other ground meat
    6 cloves fresh garlic, minced
    8 ounces diced green chiles--mixture of Anaheim and jalapeno
    1/2 teaspoon ground black pepper
    1 teaspoon salt
    3 Tablespoons prepared chili powder
    1 Tablespoon dried oregano
    1 Tablespoon dried basil
    1 (28-ounce) can stewed tomatoes-mexican style
    1 (32-ounce) can black beans, rinsed and well drained
    1/4 cup chopped fresh cilantro
    about 1 cup shredded mild cheddar cheese

    Recipe



    1. In a large skillet or Dutch oven, heat oil over low
    heat. Saute the onions and red pepper for about 10
    minutes or until tender but not browned.
    2. Add the sausage and ground meat and brown over medium
    heat. Drain any excess fat from pan.
    3. Add the garlic, chiles, pepper, salt, chili powder,
    oregano, basil, beans and stewed tomatos.
    4. Simmer over low heat for 20 - 30 minutes. Taste to
    adjust seasonings. Stir in cilantro before serving.
    Garnish with cheese as desired.
    May be made ahead and reheated.

    SERVES: 8 - 10
