Cream of Broccoli Soup

List of Ingredients
4 slices bacon, cut into small pieces
1 medium onion, chopped
3 cups chopped broccoli
1 1/2 cups water or one can of chicken broth
1 Tablespoon bouillon mix for chicken broth (I like
Knorr-Suisse brand)
1/2 teaspoon pepper
1/4 teaspoon guar gum
3 cups half-and-half or heavy cream
Recipe
Cook bacon in heavy saucepan until browned. After it is
cooled, use a fork to crumble it up. Add onion and cook over
medium heat until tender. Add broccoli, water (or broth),
bouillon mix and pepper. Bring to a boil, reduce heat, cover
and simmer 5-7 minutes or until broccoli is tender. Stir in
cream and reduce heat. Stir in guar gum, sprinkling it over
the liquid and stirring it in as you sprinkle, until it
reaches the correct thickness (only slightly thickened)
Stirring constantly, bring mixture to almost a boil and
serve. 4-6 servings
