    Creamy Mushroom Soup for One

    1/2 a small onion cut into a fine mince
    3 or 4 baby bella or white mushrooms, sliced thin
    1 cup chicken stock (I snared some turky stock out of the giant pot my
    dad made for gravy tomorrow :)
    1/4 cup or so sour cream (though yogurt would probably be good too)
    2 tablespoons cream
    dill weed, thyme, black pepper and salt
    1/2 teaspoon of vinegar (white wine or cider)
    refined coconut oil and butter

    In a small sauce pan saute the onion in the fat with the seasonings
    over medium heat until limp but not brown. Add mushrooms and a little
    more oil if needed and cook until they are soft. Take your time, they
    are better if cooked longer :)
    Add stock to the pot and deglaze if necessary. Bring stock up to a
    simmer, adjust seasonings, adding vinegar or more salt or pepper.
    Bring heat down and add the sour cream and cream. Stir until well
    combined and serve with a slice of buttered bread.
