Crockpot Kettle Chili

Recipe Introduction
This is my family's favorite chili. It uses kettle beef
instead of hamburger which gives it a great texture.
4 lb. grass fed kettle beef
8 slices smoked grass fed beef bacon
3 Tbs Ancho chili powder or chipotle
3 Tbs red chili powder
2 tsp cumin seed
2 tsp oregano
1 tsp Celtic sea salt (optional)
3 large garlic cloves, minced
1 large onion, minced
2 Tbs lemon juice
2 Tbs olive oil
2 Tbs cornstarch
1 large can crushed tomatoes
Water
Mix together chili powder, cumin, oregano and salt setting
aside.
Add oil to skillet and saute garlic and onion until cooked.
Cut bacon slices into 1/2 to 1-inch pieces. Put the bacon
and kettle beef into your crockpot.
Add the spice mixture to the meat and toss.
Add tomatoes and lemon juice.
Cook beef on low (200F degrees) for 8 hours.
Mix cornstarch with 1/2 to 2/3 cup water and stir into the
chili. Return to heat until thickened.
Serve alone or over rice.
