Hearty Hamburger Soup

Recipe Introduction
Here is a recipe that is simple to prepare and freezes
well. Make a large pot of hamburger soup to warm you on
cold winter days.
2 Tbs butter
1 medium onion chopped
1 1/2 pound ground grass fed beef
1 large can whole tomatoes
3 cans organic beef broth (10.5 ounces per can or make your
own) plus 2 cans of water
4 medium carrots cut into quarters
4 tops off of celery
6 sprigs of parsley
1/2 to 1 tsp fresh or dried thyme
Salt to taste
Melt butter, add onion, and cook until onion is limp. Add
beef and stir until cooked.
Add tomatoes, beef broth, carrots, celery, parsley, thyme
and salt. Cook over low heat for about 45 minutes. May be
served with plain toast covered with organic cheese.
