Asparagus Roll-ups
Source of Recipe
Joanne Gainey
12 slices ham*
1 (8-ounce) package softened cream cheese
4 ounces softened blue cheese
24 fresh asparagus, parboiled
1/2 cup melted butter
Mix cheeses. Spread cheese mixture on each ham slice, and top with 2
asparagus spears. Roll meat around the asparagus and secure with
toothpicks, dip in melted butter. Cut each roll into half on angle and
freeze or refrigerate. When ready to serve, bake in a preheated 400 degree
oven for 15 minutes until cheese is bubbly.
*flattened chicken breasts or sliced turkey can be used in place of the ham
if desired. To make it with chicken breasts, flatten until about 3/8 inch
thick and cut into halves roll asparagus, dip and save. To cook, allow
enough cooking time (25 minutes) to cook the chicken--being so thin it will
cook quickly, but it needs to be in a cooler oven (350 degrees) so the
chicken has time to cook thoroughly without drying too much.
