Eggplant & Tomato Parmesan

List of Ingredients
1 sm eggplant about 8 oz.
salt and pepper to taste
2 Tbsp of chicken broth or butter
2 med tomatoes (sliced or diced)
1 Tbsp of lc bread crumbs*
2 Tbsp grated parmesan
1/4 tsp basil
Recipe
Preheat oven to 425*, Trim eggplant and slice into 1/2 inch slices. Arrange on a baking sheet in a single layer. Either use Chicken broth or melted butter, and brush on. Then season with salt and pepper. Bake @425* for 12 minutes. Remove from heat, but do not turn off the oven. Place either sliced or diced tomatoes on each slice of eggplant. Combine cheese and bread crumbs, with basil. Mix well and sprinkle over each slice. Return to oven and bake for 5-6 minutes or until lightly browned.
One note: I used Pepperidge Farm light style 7 grain bread I only use 1 slice @ 8 carbs per slice. It makes more than 1 TB. of bread crumbs. I not sure how many Tbsp come out of one slice.
