    1 head cauliflower, broken into large flowerets
    3/4 cup grated Parmesan cheese
    1/2 cup mayonnaise
    1 tablespoon lemon juice
    2 tablespoons Dijon mustard
    1 tablespoon minced fresh parsley (optional)
    1/4 cup thinly sliced green onion (optional)

    Recipe



    Cook cauliflower, covered, in a saucepan over medium-high heat in
    a small amount of boiling water 8 to 10 minutes or until crisp-
    tender; drain. Place flowerets in a lightly greased 2 quart baking
    dish

    Stir together Parmesan cheese and next 5 ingredients; spread
    evenly over cauliflower.

    Bake at 375 for 15 minutes or until lightly browned. Serve
    immediately. Yield 6 servings.

    Valentine Variation: Clean and seed a red bell pepper. Using a miniature
    heart-shaped cookie cutter, cut out red pepper hearts and sprinkle over the
    top of the "frosted cauliflower before baking. Bake as per original
    directions. (Save the rest of the red bell pepper bits for salads.)
