5 pounds spinach -- raw
1/2 cup olive oil
8 cloves garlic -- minced
salt and pepper -- to taste
Recipe
Remove stems from spinach and wash the leaves thoroughly. Leave
spinach slightly damp.
Heat oil in a large kettle. Add garlic and cook over medium heat
until golden.
Add spinach, stirring to coat with the oil. Cover and stir
occasionally until the spinach is tender, about 7 minutes.
Season with salt and pepper to taste and serve hot.
