    **If you have never prepared fresh green beans, there is a fiber "string" that runs along one side of the beans--if you snap off the stem end and peel it back, the string should come off along with the broken off piece of stem. You can look at the beans to tell which side has the "string"--it has an indentation that runs the length of the bean. Break off the stem end moving in the direction of the indentation. If you don't remove the strings, the beans are tough and difficult to eat.

    Be sure to test the beans before buying them--the shells should be firm and "well fitted" not loose around the beans, and the beans in them should be fairly small--but not tiny. The proportion of shell to beans should be about 1/2 and 1/2--you have seen good green beans that are frozen or canned--select beans that look very similar when cut with a fingernail. (Be a nice guy and purchase the bean on which you run your test--don't throw it back and select other beans to buy)


    List of Ingredients




    2 1/2 pounds fresh green beans
    3 cups water

    Sauce:
    1 Tablespoon olive oil
    6 cloves fresh garlic, peeled
    4 Tablespoons Butter
    1/4 teaspoon salt
    1/2 teaspoon pepper
    1/2 teaspoon basil
    1/2 teaspoon parsley
    2 Tablespoons grated Parmesan cheese

    Wash beans, trim ends and remove strings.** Steam until crisp tender. Keep covered, turn off heat and keep warm. Drain water when the sauce is ready, and put beans into a medium to large pre-warmed serving bowl.

    Sauce:

    Slice one of the garlic cloves lengthwise and then across--making very thin slices. Set aside.

    Using a sauté pan, add olive oil, and the remaining garlic-crushed, (crush the garlic holding crusher over the sauté pan so juices go into the pan, add the crushed remains to the sauté pan as well. ) Cook until the garlic starts to brown very slightly--do not over cook. Add the sliced garlic to the pan, and cook until it changes color. Stir in remaining ingredients until the butter is melted and spices are well mixed, then pour over beans. Stir gently in a rolling motion, until beans are thoroughly coated with sauce. Sprinkle with additional shredded or grated Parmesan, or sesame seeds if desired. This sauce is ready in just 7 minutes, or so.

    Serves 6 to 8.
