Grilled Eggplant

Don't forget about grilling--cut a young eggplant into half
inch slices, brush with olive oil, garlic and herbs and
grill for five minutes on each side.
You can even make eggplant chips--just slice into
quarter-inch rounds, sprinkle with salt and olive oil and
bake at 450°F until crisp--about 5-10 minutes. However you
prefer your eggplant, have some soon. They're high in fiber,
low in fat and full of flavor. You can't beat that
combination
