    RUTABAGA FRIES

    Let’s face it…rutabagas are not a very pretty vegetable. They are oddly shaped and covered in wax to preserve them. They are hard as a rock and not very easy to peel. However, they are far lower in carbs than potatoes, which is exactly why I like the rutabaga. The Eades Gram Counter lists one cup of boiled rutabaga cubes as 11.8 carbs. They list 1/2 cup of boiled potatoes at 14.3 carbs. The taste is different than a potato, but not unpleasantly.

    To make the fries, you will first need to peel the rutabaga to remove the wax and skin. Not an easy task, but you can do it. Everyone has their own method of peeling it. After you’ve finished, give it a rinse and dry it. Place it on a cutting board and with a sharp knife….cut it in half. This is where Michael yells, “Put down the knife and walk away”. “I can do it” I yell. ”Give me the knife” he yells. I sigh…he then proceeds to do the cutting as…wellllll….I have a reputation in our household of…wellll…doing damage.

    I take over once it’s cut in half. I put the cut side down and cut slices that are maybe 3/8 inch or so wide. Then I cut each of the slices into strips (French fries). I prefer the size of those you USED to get at McDonald’s, but you can cut them to the size of steak fries also.

    I then put all the fries into a skillet and cover with water and par boil them until they are tender (but not mushy). I then drain the water (Michael again groans as I put a cover on the 12” skillet and drain it over the sink trying not to lose any fries).

    I then add some oil to the skillet, but I don’t drown the fries. I then sprinkle on a new seasoning that we have at the store called Austin’s Angus Acres-Black Angus Steak Seasoning (made right here in Wisconsin with no sugar added). It is great on steaks and on scrambled eggs. I use a lot, but you can sprinkle it on to your taste. Stir the pan of fries until they are well coated and pan fry them over a medium high heat until they are browned to your liking.

    Dump them on a plate and squeeze on some Heinz One-Carb Ketchup and WHA-LA…FRIES!
