Spicy Spinach

Spray medium wok with nonstick cooking spray
1 teaspoon olive oil
1 red bell pepper,cut into pieces
1 clove garlic, minced
1 lb fresh spinach,rinsed 3 times, chopped (or use a 1 lb box of frozen
chopped spinach, rinsed in colander to defrost
1 Tablespoon dark mustard
1 Tablespoon apple cider vinegar
1 teaspoon lemon juice
1/4 teaspoon red pepper flakes
3 Tablespoons butter
Recipe
Heat wok over high heat. add oil, swirl around and then lower heat to
medium. Add red bell pepper and garlic; cook and stir 3 minutes.
Add spinach; cook and stir 3 minutes or just until spinach begins to
wilt. Push spinach up on the sides of the wok, and in the middle, stir in
mustard, vinegar, lemon juice and red pepper flakes. Add butter and
stir-fry spinach for an additional 2 minutes. Serve immediately.
