    ZUCCHINI "HASHBROWNS"

    List of Ingredients




    2 medium unpeeled zucchini, shredded (1 cup grated)
    1 small onion, grated
    1 egg
    1/4 cup finely crushed pork rinds
    1 cup shredded cheddar cheese
    salt and pepper to taste
    butter for frying

    Recipe



    In a bowl, combine zucchini, onion and egg. Add pork rind crumbs, set aside
    for a few minutes for pork rinds to absorb the eggs and make the mixture
    hold together. Stir in cheese, salt and pepper. In skillet or griddle over
    medium heat, melt butter. Drop batter by ¼ cupfuls into skillet and flatten.
    Cook until crispy and brown, turn and cook the other side. Makes about 1
    dozen. Serve with more butter if desired.
