Eggplant Relish

List of Ingredients
3 cups water
1 cup white vinegar
1 teaspoon salt
3 cups eggplant -- peeled and shredded
3 tablespoons olive oil
1/4 cup carrot -- peeled and shredded
1/4 cup chopped parsley
1/4 cup onion -- chopped
1 1/2 teaspoons oregano
2 cloves chopped garlic
2 tablespoons Splenda
salt and pepper -- to taste
Recipe
Bring water, vinegar and salt to a boil.
Pour over eggplant and let sit for about 10 minutes, or until slightly
wilted.
Pour off all, but enough liquid just to cover eggplant.
Add all other ingredients and let marinate at least 2 hours before serving.
