    This delicate tea bread is perfect for summer lunch.

    List of Ingredients




    3/4 cup plus 2 tsp lemon yogurt divided
    1/2 cup dried apricots
    1/2 cup butter
    3/4 cup plus 2 tbsp icing sugar divided
    3 eggs
    1 tbsp grated lemon peel
    2 cupc self rising flour

    Recipe



    In blender combine 3./4 cup yogurt and apricots; cover and process till smooth. In bowl cream butter and 3/4 cup icing sugar. beat in eggs, peel and ypgurt mixture, mix well. Add flour just until combined. Spoon into greased loaf pan. Bake 325 for 60-65 min till tested. Cool 10 min before removing to rack. Combine remaining yogurt and icing sugar and drizzle on top.
