    Pat's Artic Bread With Carrot Marmalade

    This recipe comes from sister Pat, who besides me is the only one I know who collects cookbooks and loves to cook.

    List of Ingredients




    1 cup cooked original Red River Cereal (not instant)
    3/4 cup water (cereal is cooked in)
    2 Tbsp instant yeast
    2 cups whole wheat flour
    4 cups white flour
    1/2 cup wheat germ (opt)
    1/4 cup ground flax (opt)
    1 Tbsp sugar
    1 1/2 tsp salt
    3/4 cup molasses
    1/2 cup oil
    3 cups warm water
    Marmalade:
    4 cups grated carrots
    1 1/2 tsp grated lemon rind
    1 cup orange juice
    3 Tbsp orange rind
    1 tsp ginger
    3 1/2 tsp sugar
    1 cup diced pineapple
    4 tbsp lemon juice

    Recipe



    Mix the bread ingredients together add to cooked cereal and add 1/2-3/4 cup molasses, 1/2 cup oil and 3 cups lukewarm water. Liquids need to be fairly warm when adding to above dry ingredients, Mix well then add 2 beaten eggs and mix well. Add 4-6 cups white flour, knead mixture till right consistency, firm but not stiff, and let stand 10 min. Put in pans and bake 350 35-40 min (aprox)
    Marmalade:
    Cook carrots, rind of lemon and orange ( you can add more zest if needed)and the rinds and remove later. Add a small amount of water and cook till tender about 4-5 min. Add 1 tsp ginger,3 1/2 tsp sugar and 1 cup diced pineapple. Cook till thick and clear ( you can add a box of certo to help it set) add 4 Tbsp lemon juice and cook 5 min. Pour into jars and seal. Best on Artic Bread.
