Broiled Flounder with Fennel

List of Ingredients
1 tbsp grated lemon rind
2 tsp fennel seeds, crushed
1 tsp thyme
pinch of salt (opt)
1 1/2 cups sliced fennel
4 fillets
pepper
2 tbsp fresh squeezed lemon juice (opt)
2 tbsp fresh squeezed orange juice (opt)
Recipe
In a small bowl combine the lemon rind, fennel seeds,thyme and salt, mix well.
Rinse the fish and pat dry. Coat both sides of the fish with spray. Place in single layer on platter. Sprinkle with the seasoning mix and pat firm in place. Cover and refrigerate 1-2 hrs.
About 15 minutes before cooking fish, bring 1" of water to a boil in large pot. Add sliced fennel and cook 5-7 minutes till tender. Drain; return to pot and mist with spray. Srpinkle with pepper. Cover and keep warm.
Cover a baking sheet with foil. Place fish on sheet, Broil 4" from heat till opaque. Serve the fish with the fennel. Sprinkle with lemon juice and orange if using.
