    SEARING METHOD:

    Beef 500 degrees for 30 minutes,
    then reduce to 350 degrees for

    remainder of cooking time.
    15-18 minutes per lb.
    18-20 minutes per lb.

    22-25 minutes lb.
    Rare 140 degrees
    Med. 160 degrees

    Well done 175 degrees

    Pork 500 degrees for 15- 20 minutes,
    then reduce to 350 degrees for

    remaider of the time
    25-27 minutes per lb. 185 degrees
    Chicken 500 degrees for 30 minutes,
    then reduce to 325 minutes for

    remainder of the time
    25-30 minutes per lb. 175-180 degrees
    Turkey 350 degrees
    325 degrees

    325 degrees


    20-25 min. per lb.
    18-20 min per lb.

    15-18 min. per lb.


    8-10 lbs.
    10-15 lbs.

    15 lbs or over

    180 degrees





    LOW TEMPERATURE METHOD:

    Beef 300-325 degrees 18-20 min. per lb.
    20-20 min. per lb.

    25-30 min. per lb.
    Rare 140 degrees
    Med. 160 degrees

    35-40 min. per lb.

    185 degrees
