    Ginger stuffed tomatoes

    This is a very healthy dish.

    List of Ingredients




    1/4 cup rice vinegar or cider vinegar
    2 tbsp sugar
    1 1/2 tsp minced fresh ginger
    1 tsp low sodium soy sauce
    1 cucumber, peeled, seeded,shredded
    1/2 tsp dark sesame oil
    20 cherry tomatoes
    2 tsp toasted sesame seeds (opt)

    Recipe



    In a medium bowl, combine the vinegar sugar,ginger,soy sauce,and oil. Add the cucumbers and mix well. The mixture will be watery. Lightly smash with a potato masher. let stand for 20-30 min.

    Slice 1/8" from the stem end of each tomato. Cut a thin slice from the tomato bottoms, if necessary, so the tomatoes can stand without wobbling. With a small metal melon baller, remove the flesh from inside the tomatoes, discard.
    Drain the cucumbers. with your fingers or small spoon. stuff the cucumber mixture into tomatoes. Sprinkle with sesame seeds.
