Eye of the Round Roast
List of Ingredients
3 to 5 1/2 lb. eye of the round roast
2 cloves garlic, slivered
strips of bacon (optional)
3 to 5 1/2 lb. eye of the round roast

Recipe
Cut slits in the top of roast and insert slivers of garlic cloves. Set meat at room temp for 1 1/2 hours. Place strips of bacon on the top of the roast. Preheat oven to 500 degrees. Place roast in a shallow pan and roast at 500 degrees for 4 minutes per pound. Turn the oven off and leave the door closed. Leave in the oven for 2 hours, without opening the door. Remove from oven. Slice thin diagonally. Perfect medium rare meat every time.
