Autoport Jack
4 to 6 biscuits or English muffins split and buttered
2 medium tomatoes, sliced thin
1 medium sliced onion
1 small can sliced mushrooms, drained or fresh sautéed
1 can cream of mushroom soup
1 C sour cream
1 1/2 C or more shredded Monterey Jack cheese or cheddar
thinly sliced chipped ham, beef, turkey or summer
sausage (enough to make a shallow layer in the
bottom of 4 individual casseroles)
Butter small casserole dishes, layer first the meat, then biscuits, then tomatoes, onions and mushrooms. Mix soup and sour cream together and pour over all. Sprinkle with cheese and bake 350 about 1/2 hour. I use shallow individual casseroles but could be done in one larger one. We like this with sliced summer sausage. Autoport Restaurant (State College, PA) uses a pile of chipped ham and a pile of chipped turkey breast placed on top of split muffin, then sauce, and then the cheese.
