Suzanne’s Chicken
6 T butter, melted
2 T vegetable oil
4-6 chicken breasts
6 T Dijon mustard
3 T green onion, minced
1/2 tsp tarragon
1/2 tsp thyme or basil
1/8 tsp pepper and a pinch of cayenne pepper
4 C breadcrumbs
Dry chicken breasts and paint with butter and oil. Skin side down in broiler pan 5 to 6 inches from heat. Broil 10 minutes on each side. Baste with butter/oil every 5 minutes. Cool. Mix remaining ingredients except breadcrumbs. Add half of the basting fat to mustard mix. Paint chicken. Roll chicken in breadcrumbs (4 C) for 4-6 servings. Place chicken skin side up. Dribble with other half of basting fat and bake at 400 for 20-25 minutes.
