Cook desired number of potatoes until well cooked. Mash and whip as for regular mashed potatoes using milk, butter and salt. Add some chopped chives or onion flakes. Place in a shallow greased casserole. Top with a layer of first sour cream, then a layer of grated cheddar cheese. Lightly sprinkle top with paprika. Bake 20 – 30 minutes at 350 until topping is bubbly and a little lightly browned. Can be frozen.
