    Garlicky Potato Latkes


    4 large baking potatoes (2 ½ lb.) peeled and shredded
    2 large eggs, lightly beaten
    1 medium onion, chopped fine
    2 T flour
    5-6 cloves garlic, minced
    1 tsp salt
    ¼ tsp baking powder
    1 T lemon juice
    vegetable oil for frying

    Stir in eggs, onion, flour, garlic, salt, baking powder and lemon juice into shredded potatoes. Heat oil in a skillet at 375. Drop potato mixture in oil to form flat patties; fry until golden brown on each side.
