About 3 C cooked rice (I use "boil-in-bag" packaged rice)
One can black beans
About a ½ C of Salsa (hot or mild, as you prefer)
Partially drain (not completely) beans - combine with rice, and add salsa to taste (I like a "chunky" style to give color). Microwave 3-4 minutes. Makes a nice side dish with Mexican foods.
