Roasted Potatoes with Garlic
1 1b red small to medium red potatoes, unpeeled and halved
or quartered, depending on size (1 inch pieces)
2 T olive oil
1/2 tsp salt
1/2 tsp coarsely ground black pepper
5-6 garlic cloves, minced
1-2 sprigs fresh rosemary
1 whole bay leaf
In a large cast iron skillet, toss potatoes with all ingredients, except rosemary and bay leaf. Lay the sprig of rosemary and the bay leaf on top of the potatoes. Roast at 450 for about 1 hour, turning occasionally, until golden and fork tender. Serve roasted potatoes warm.
