Spinach Supreme
1 ½ lbs. fresh spinach, washed, and stems removed
½ C onion, chopped
½ C celery, chopped
2 T green pepper, chopped (optional)
¼ C butter or margarine
1 (10 ¾ oz) can cream of mushroom soup, undiluted
6 oz. American cheese, diced
dash of garlic powder
1 C soft breadcrumbs, divided
Put spinach in a saucepan (no water), cover and cook over high heat 3-5 minutes. Drain well, chop coarsely, and set aside. Sauté onion, celery, and green pepper in butter until tender. Stir in soup; cook over med. heat, stirring constantly, until thoroughly heated. Add cheese & garlic powder; stir until cheese melts. Stir in spinach & ¾ C bread crumbs; pour into a greased 10 x 6 x 2 baking dish. Sprinkle remaining ¼ cup breadcrumbs over top; bake at 350 for
