Speedy Salsa Chicken Quesadillas
1/2 cup salsa (best to use jarred and not fresh)
2 Tbsp Miracle Whip Fat Free
1/2 tsp Chili powder
8 flour tortillas (I use Mission Fajita size, reg flour)
3/4 lb cooked boneless, skinless chicken breasts sliced (I use Purdue Short Cuts Roasted Chicken - 1 package)
1 cup Kraft 2% Mexican style shredded four cheese Recipe
Mix salsa, Miracle Whip & chili powder.
Spread salsa mixture evenly on the tortillas.
Layer chicken and shredded cheese evenly on half of each tortilla.
Fold tortillas in half to enclose filling.
Heat large skillet sprayed wiht cooking spray on medium heat. Add quesadillas, 2 at a time; cook 4 to 5 minutes on each side or until lightly browned on both sides. Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges to serve.
