Yield: one loaf -- 18 1/2-inch slices
List of Ingredients
1 cup sugar
1/2 cup shortening
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon allspice
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 cup finely grated carrots
1/2 cup raisins Recipe
Cream together sugar and shortening. Sift together dry ingredients in a separate bowl. Add dry ingredients to creamed mixture. Add eggs, one at a time. Add grated carrots and raisins. Pour into greased and floured loaf pan (9 1/4 x 5 1/4 x 2 3/4).
Bake for 55 minutes at 375.
