    BANANA BATTER FRENCH TOAST

    This is good for breakfast or dinner

    Serves: 4
    Preparation Time: 10 min
    Cooking Time: 10 min

    List of Ingredients





    1 ripe banana, mashed (the banana really needs to have speckles or even dark to be ripe enough)

    1 whole egg

    1 egg white

    1/2 cup milk

    1/2 teaspoon vanilla

    2 teaspoons vegetable oil

    4-6 slices bread (I like to use Texas Toast)

    Recipe



    Beat the banana, egg, egg white, milk and vanilla together in a small bowl.

    Warm the oil in a large non-stick skillet over medium high heat.

    Dip each piece of bread into the batter, turning them to coat both sides. Fry until brown on both sides. Serve with powdered sugar, yogurt and fresh fruit, fruit syrup, etc.

    NOTE: Sometimes I put a couple sprinkles of cinnamon in the batter.
