    List of Ingredients




    2 c. sifted flour
    2 tsp. baking powder
    1 1/2 tsp. baking soda
    1 1/2 tsp. salt
    2 tsp. cinnamon
    2 c. sugar
    1 1/2 c. oil
    4 eggs
    2 c. grated carrots
    1 (8 1/2 oz.) can crushed pineapple, drained
    1/2 c. nuts, chopped
    1 (3 1/2 oz.) can coconut (about 1 c.)

    Recipe



    Sift flour, baking powder, salt, baking soda, and cinnamon. Add sugar, oil, and eggs; mix well. Add remaining ingredients.
    Pour batter into 3 (9-inch) pans or 1 (13x9) pan (all pans greased and floured). Bake at 350 degrees for 35-40 minutes. Cool in pan then put on wire racks.


    CREAM CHEESE FROSTING:

    1/2 c. butter
    1 (8 oz.) pkg. cream cheese
    1 tsp. vanilla
    1 lb. sifted confectioners sugar
