Pineapple & Carrot Cake

2 cups flour
2 tsp baking soda
1 1/4 tsp salt
2 tsp cinnamon
4 eggs
2 cups sugar
1 cup oil or melted butter
2 cups grated carrots
2 cups crushed pineapple, well drained
1 cup walnuts, or fresh coconutRecipe
Sift together flour, baking soda, salt and cinnamon. Mix well together eggs, sugar and oil.
Add to liquid mixture beating well after each addition the carrots, pineapple and walnuts.
Add sifted dry ingredients. Mix well.
Pour into greased and floured 9x13-inch pan. Bake at 350 F for 40 minutes.
