    Baked Macaroni with Double Cheese

    16 ounces Small Elbow Macaroni
    1/4 cup margarine or butter
    1/3 cup unsifted flour
    1/2 to teaspoon salt
    1/4 teaspoon pepper
    4 cups milk
    2 cups (8 ounces) shredded Cheddar cheese, divided
    1 cup (4 ounces) shredded Swiss cheese

    Directions:
    Preheat oven to 375°F. Cook and drain pasta. Melt margarine in a large saucepan over medium heat; stir in flour, salt & pepper. Gradually stir in milk. Cook and stir until thickened & bubbly. Remove from heat. Add 1-1/2 cups Cheddar cheese; stir until melted. Stir in Macaroni. Spoon half of Macaroni mixture into a greased 13x9-inch baking dish; top with Swiss cheese, remaining Macaroni mixture then remaining Cheddar cheese. Bake uncovered 30 minutes or until bubbly.
