    Loaded Baked Potato Casserole

    8-12 medium baking potaotes boiled till done

    mash with 8oz softened crem cheese, 16 oz sour cream and 1 stick of softend butter.

    Then I mix in 6 slices of crispy cooked bacon, crumbled (bacon bits work fine also)
    3-4 green onions chopped
    1 1/2 cups of shredded cheddar cheese
    1/4 tsp pepper and a little salt if desired

    After everythin is mixed, place in a greased baking dish and top with 1/2 C remaining cheese. Bake at 350 for 30 minutes or so. You can sprinkle dried chives over the top if desired.

    I usually make this ahead and pop it in the fridge. If you do this, take it out about 30 minutes before baking to come to room temp.

    I have also done this and left out the bacon, cheese and onion and cut the sour cream to 8oz if I'm serving gravy.
