    1 1/2 lbs ground beef
    1/4 cup fine dry bread crumbs
    3/4 cup lemon rind, grated
    Salt and pepper to taste
    1/4 cup minced onion
    1 tbsp margarine
    1 can (3 oz.) sliced mushrooms, drained (but saved juice)
    2 tbsp flour
    1 bouillon cube dissolved in 1 cup boiling water
    2 tbsp ketchup
    1/2 cup sour cream
    1 pkg (6 oz.) sour cream
    Chopped parsley

    Prepare rice according to package directions. Lightly mix first 4 ingredients, 1 1/2 tsp salt, 1 1/2 tsp pepper and 2 tbsp onions. Shape into 18 balls and brown slowly in butter in skillet. Remove and sauté remaining onions and mushrooms in drippings in skillet. Blend in flour; gradually add mushroom liquid and bouillon and bring to boil, stirring occasionally. Add meatballs, cover and simmer 15 minutes. Remove meatballs to hot serving dish. Stir ketchup and sour cream into liquid in skillet, heat and season. Pour sauce over meatballs; sprinkle with parsley. Serve over rice.
